Recipe - Spinach & Prosciutto Breakfast Strata

Ingredients:

2 cup milk
2 day old loaves sour dough bread, sliced and air dried
8 ounces prosciutto, thinly sliced
2 pkg frozen chopped spinach - thawed and drained well
1 pound fresh mozzarella cheese, sliced or grated
1/2 cup pesto
4 eggs beaten
salt and pepper to taste

Method:

prepare this dish one day before serving.
put mixing milk in a shallow bowl.
dip bread slices. Squeeze as much liquid out as possible without tearing the bread
place a layer of bread in a 9" x 12" brownie pan or similar
layer spinach, slices of cheese and prosciutto
spread some pesto on top of the prosciutto
continue layering until the dish is filled; you should have 3 or 4 layers.
beat eggs and add a touch of salt and pepper
pour over the layers, cover with plastic and refrigerate overnight.

next morning, bake at 350 degrees until browned, Approx. 45 minutes to one hour.
serve hot or at room temperature.
