Cold Sesame Noodles

Makes 6 servings.

1 pound Chinese egg noodles (substitute linguine)

Sauce

1/2 cup smooth unsalted peanut butter
1/2 cup tahini
3 tbsp tamari soy sauce
2 tbsp dark Chinese-style sesame oil
2 tbsp hot chile oil
2 tbsp rice vinegar
2 T packed brown sugar
1 inch piece of ginger, minced
1/2 cup chicken or vegetable stock, (or water)

Garnishes

1/4 cup chopped peanuts
1/2 cup chopped cilantro
1 cucumber, peeled and sliced
1 bunch chopped scallions

Method

  1. Cook the noodles according to directions on package
  2. Put the peanut butter and tahini in a small saucepan and heat slowly until melted
  3. Add soy sauce, oils, vinegar, sugar and ginger, stock or water. Let cool.
  4. Pour the sauce over the noodles and mix thoroughly
  5. Toss in cilantro and peanuts
  6. Garnish with scallions and sliced cucumbers
  7. Chill for an hour before serving.
