2 T packed brown sugar
1 inch piece of ginger, minced
1/2 cup chicken or vegetable stock, (or water)
1/4 cup chopped peanuts
1/2 cup chopped cilantro
1 cucumber, peeled and sliced
1 bunch chopped scallions
